Morning Moo Review Part Two

Since using Morning Moo for our French Toast Recipe, I have had a lot of fun experimenting with it and trying to make different things that I normally use real milk to create.

I have played with the farm cheese recipe a bit more and feel that Morning Moo is more than passable as a substitute for standard powdered milk. Although it truly is not my favorite in coffee, tea, or to drink plain, it does work in many recipes.

I hope that my reviews will encourage you to try it yourself, should you find it in your own storage cupboards or bulk purchases. 

IN BREADS: As far as using it in our homemade, sourdough whole wheat bread, in my experience it seems to work as well as water, but not quite as well as real milk. The loaves which I made containing Morning Moo seemed a bit heavier and thicker than my normal loaf of sourdough bread. I made two different types as well as one batch of cloverleaf dinner rolls. Each batch, made from dough on separate days of the week, seemed about the same when baked. 

This result doesn't honestly make that much of a difference in the baked product, but there are some who might feel the breads were a bit "old fashioned" tasting because of their texture and heaviness. I find that real milk or water will actually make a lighter loaf that rises quicker and bakes softer than those made with the Morning-Moo, more like a store-bought bread.

FARM CHEESE: I have made several batches of farm cheese now with the Morning Moo, and feel that it is very workable. We made fresh sourdough bagels for breakfast one morning and used the farm cheese to make a soft cream cheese style spread.

Taking the farm cheese, I mixed it with a pinch of salt and a pinch of sugar. This gave it just the right balance of cheesy-falvor, plus the slightly salty-sweet of real cream cheese. Then, placing all this in a jar, I used my hand blender and "pureed" it until smooth and well combined. 

We served it as usual, with fresh sliced tomato, onion and chopped chives. We also tried the spread on bread and bagels with jam. It was almost impossible to tell the difference between store bought cream cheese and this concoction.

Although I'm often accused of being what some would call a "purist" when it comes to home storage foods, if we ended up with some Morning Moo or similar products, I would now know that it can be used. In the past, I might have given it away or tossed it, (sorry!!! But true!!!). Today, I would use it intermittently with my regular powdered milk products. So, Morning Moo would be a keeper!
